Frozen veggies and hash brown potatoes make this dinner omelet easy to prepare. Add Parmesan before and after cooking, and it's a new family favorite!
What You Need
Original recipe yields 6 servings
3 Tbsp. oil
2 cups ORE-IDA Shredded Hash Brown Potatoes
1 cup frozen mixed vegetables (carrots, corn, green beans, peas), thawed
6 egg s, beaten
2 Tbsp. milk
5 Tbsp. KRAFT Grated Parmesan Cheese, divided

Let's Make It
Heat oil in large nonstick skillet on medium-high heat. Add potatoes and vegetables; cook 7 min. or until potatoes are tender, stirring frequently.
Mix eggs, milk and 4 Tbsp. Parmesan cheese until blended. Pour egg mixture evenly over potatoes and vegetables; cover.
Cook on medium-low heat 15 min. or until eggs are almost set. Sprinkle with remaining cheese; cover. Let stand 5 min.
Make it your own by using your favorite mixed vegetable variety and topping with salsa before serving.
Serve with a bagged green salad tossed with your favorite KRAFT Dressing, such as Italian or Ranch.
