What You Need
Original recipe yields 25 servings
2 cups finely chopped cooked chicken
1/4 cup shredded carrot s, finely chopped
1/4 cup finely chopped pea pods
1/4 cup sliced water chestnuts, finely chopped
1/3 cup MIRACLE WHIP Light Dressing
1 Tbsp. finely chopped fresh cilantro
2 tsp. soy sauce
1 clove garlic, minced
25 baby Bibb lettuce leaves
1/4 cup finely chopped PLANTERS COCKTAIL Peanuts

Let's Make It
Combine chicken, carrots, pea pods and water chestnuts in large bowl.
Mix dressing, cilantro, soy sauce and garlic until blended. Add to chicken mixture; toss to evenly coat.
Spoon about 1 Tbsp. chicken mixture onto each lettuce leaf. Place on serving plate; sprinkle with nuts.
Chicken mixture can be prepared in advance. Cover and refrigerate up to 24 hours before using as directed.
Substitute Belgian endive leaves for the Bibb lettuce.
