Original recipe yields 16 servings
1-1/2 cups flour
1/2 cup sugar
2 tsp. CALUMET Baking Powder
1/2 tsp. baking soda
2 eggs
1-1/2 cups mashed ripe bananas (2 to 3 bananas)
1/4 cup oil
1/4 cup water
1-1/2 cups banana nut whole grain cereal flakes
1 oz. BAKER'S Bittersweet Chocolate, finely chopped
1 cup chopped PLANTERS Walnuts

Heat oven to 350°F.

Mix flour, sugar, baking powder and baking soda in large bowl.

Beat eggs in small bowl; stir in bananas, oil and water. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal, chocolate and nuts. Pour into 9x5-inch loaf pan sprayed with cooking spray.

Bake 55 to 65 min. or until toothpick inserted in center comes out clean. Cool 10 min.; remove from pan. Cool completely on wire rack.

For easier slicing, wrap bread and store overnight.

Prepare batter as directed; pour into 5 (6x3-inch) foil pans sprayed with cooking spray. Bake 30 min. or until toothpick inserted in centers comes out clean. Cool completely. Wrap in plastic wrap and foil and freeze up to 2 months.
Have too many ripe bananas?
Mash bananas, then store 1-1/2 cup portions in separate resealable freezer-weight plastic bags. Freeze up to 3 months. Thaw in refrigerator before using to prepare these delicious banana breads.
