This starts with a buttermilk baking mix—and results in a fragrant coffee cake sprinkled with yummy cinnamon-brown sugar crumbles.
What You Need
Original recipe yields 10 servings
2-1/3 cups all-purpose baking mix, divided
2/3 cup packed brown sugar, divided
1/2 tsp. ground cinnamon
2 Tbsp. cold butter or margarine
1/2 cup warm water
1 Tbsp. MAXWELL HOUSE Instant Coffee (any variety), cooled
1/4 cup milk

Heat oven to 375°F.
Combine 1/3 cup each baking mix and sugar, and cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs.
Add warm water to coffee in separate medium bowl; stir until dissolved. Add egg and milk; whisk until blended. Add remaining baking mix and sugar; mix well.
Pour into 9-inch round pan sprayed with cooking spray; sprinkle with cinnamon mixture.
Bake 18 to 22 min. or until toothpick inserted in center comes out clean.
Sprinkle with 1 oz. grated BAKER'S Semi-Sweet Chocolate just before serving. Use a box grater to grate the chocolate onto sheet of waxed paper. Use immediately or refrigerate until ready to use.
