Cornbread stuffing mix and sweet corn kernels combine with a rich mole sauce to make this super-flavorful side dish.
What You Need
Original recipe yields 8 servings
1 onion, chopped
2 cloves garlic, minced
1 Tbsp. butter or margarine
1 cup mole sauce
1/2 cup water
1 pkg. (6 oz.) STOVE TOP Cornbread Stuffing Mix
2 cups frozen corn, cooked

Let's Make It
Cook onions and garlic in butter on medium heat 3 min. or until onions are crisp-tender. Stir in mole sauce and water. Bring to boil, stirring frequently.
Add stuffing mix and corn; mix well. Cover.
Remove from heat. Let stand 5 min. Fluff with fork.
Prepare using your favorite mole sauce, such as negro or verde.
Garnish with 1 Tbsp. chopped fresh cilantro before serving.
