Made with marinated artichokes and roasted red peppers, these Cheesy Antipasto-Stuffing Appetizer Meatballs combine two party favorites in one tasty dish.
What You Need
Original recipe yields 20 servings
3/4 cup STOVE TOP Everyday Stuffing Mix for Chicken
1/3 cup milk
1 lb. ground chicken
1 jar (4 oz.) marinated artichoke hearts, drained, finely chopped
1/4 cup chopped roasted red peppers
1/2 cup KRAFT Shredded Mozzarella Cheese
1/4 cup chopped fresh basil

Heat oven to 425ºF.
Cover rimmed baking sheet with foil; spray with cooking spray. Combine stuffing mix and milk in large bowl. Add all remaining ingredients except basil; mix well.
Shape into 20 balls, using about 2 Tbsp. of the chicken mixture for each. Place on prepared baking sheet.
Bake 12 to 15 min. or until done (165ºF). Sprinkle with basil.
