Melted Colby Jack cheese and two kinds of smoky goodness—bacon and ham—give this BBQ meatloaf its cheesy flavor and terrific aroma.
What You Need
Original recipe yields 8 servings
2 lb. lean ground beef
15 saltine crackers, crushed (about 1 cup)
2 egg s, beaten
1/2 cup finely chopped onion s
2 cloves garlic, minced
1/4 tsp. black pepper
3/4 cup KRAFT Original Barbecue Sauce, divided
6 KRAFT Big Slice Colby Jack Cheese Slice s
1/4 lb. OSCAR MAYER Baked Cooked Ham
4 slices OSCAR MAYER Bacon

Let's Make It
Heat oven to 375ºF.
Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.
Serve with a mixed green salad and your favorite fresh fruit to round out the meal.
Substitute thinly sliced capicola for the ham.
Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).
