Original recipe yields 4 servings
2 cups instant white rice, uncooked
1/4 cup MIRACLE WHIP Dressing
1-1/2 cups boiling water
4 small boneless skinless chicken breasts (1 lb.)
1 pkt. SHAKE 'N BAKE Garlic & Herb Seasoned Coating Mix
1 can (14-1/2 oz.) diced tomatoes, undrained
2 cups frozen broccoli florets
3/4 cup KRAFT Shredded Italian* Five Cheese Blend

Heat oven to 400ºF.
Combine rice, dressing and boiling water in 8-inch square baking dish; cover. Let stand 5 min. Meanwhile, coat chicken with coating mix as directed on package.
Add tomatoes to rice mixture; mix well. Top with broccoli and chicken.
Bake 45 min. or until chicken is done (165°F). Sprinkle with cheese; bake 5 min. or until melted.
Prepare using your favorite frozen vegetable or frozen mixed vegetable blend.
