Original recipe yields 8 servings
1 cup fat-free reduced-sodium chicken broth
1 cup couscous, uncooked
1 small cucumber, coarsely chopped
1 small red onion, thinly sliced, separated into rings
1 cup cherry tomatoes, halved
1/2 cup pitted black olives
1 cup KRAFT Sun Dried Tomato Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
3 cups tightly packed torn romaine lettuce

Bring broth to boil in medium saucepan. Stir in couscous; cover. Remove from heat; let stand 5 min. Meanwhile, combine next 4 ingredients in medium bowl. Add 1/2 cup dressing; mix lightly.

Fluff couscous with fork; stir in remaining dressing.

Cover platter with lettuce; top with couscous and vegetable mixture.

Serving Suggestion
Sprinkle 1/2 cup KRAFT Natural Feta Cheese Crumbles over salad just before serving.
Special Extra
Add 2 Tbsp. chopped fresh dill with the tomatoes.

For best flavor, prepare this salad ahead of time. Refrigerate at least 1 hour or up to 24 hours before serving.
