Place 1 wafer in bottom of each of 8 foil cup-lined muffin cups; set aside. Add boiling water to gelatin mix in bowl; stir 2 min. until completely dissolved. Cool 5 min., stirring occasionally.
Pour gelatin into blender. Add cream cheese; cover. Blend on medium speed 30 to 45 sec. or until blended. Add COOL WHIP; cover. Blend on lowest speed 5 sec. or just until blended. Pour into prepared muffin cups.
Refrigerate 2 to 3 hours or until firm.
If you don't have the foil liners, use paper cupcake liners instead. Spray lightly with cooking spray before placing vanilla wafer on bottom.
Top each with 1 sliced strawberry just before serving.
Prepare using your favorite flavor JELL-O Sugar Free Gelatin.
Prepare using reduced-fat vanilla wafers.
