This awesome side dish truly elevates the cheesy potato game. It's made with smoked Gouda, cream cheese, Dijon mustard and freshly chopped chives.
What You Need
Original recipe yields 6 servings
4 large baking potato es (2 lb.)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
3/4 cup shredded MAYBUD Smoked Gouda Cheese
3 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. chopped fresh chives
1/2 tsp. ground red pepper (cayenne)

Heat oven to 400°F.
Pierce each potato in several places with fork or sharp knife. Bake 50 min. to 1 hour or until tender. Cool slightly.
Mix all remaining ingredients except pepper until blended. Cut each potato crosswise into 3 slices. Use melon baller or small spoon to scoop small amount of potato from center of each slice; discard removed centers.
Place potato slices on baking sheet; sprinkle evenly with pepper. Fill centers with cream cheese mixture.
Bake 15 to 18 min. or until heated through.

For best results, use potatoes that are about 5 inches long.
