White beans and roasted red peppers are tossed with homemade vinaigrette and sprinkled with feta, toasted pine nuts and chives in this Mediterranean salad.

Original recipe yields 10 servings
1/2 cup GREY POUPON Dijon Mustard
1/2 cup olive oil
1/3 cup HEINZ Red Wine Vinegar
1/3 cup chopped fresh parsley
1 tsp. dried oregano leaves
1/4 tsp. crushed red pepper
4 cans (15 oz. each) white beans, rinsed
1 cup finely chopped roasted red pepper s
1 red onion, finely chopped
1 cup sliced black olives
1 clove garlic, minced
1 pkg. (3.4 oz.) ATHENOS Crumbled Reduced Fat Feta Cheese
2 Tbsp. pine nuts, toasted
2 Tbsp. chopped fresh chives

Whisk first 6 ingredients until blended.

Combine beans, roasted red peppers, onions, olives and garlic in large bowl. Add mustard mixture; mix lightly.

Top with cheese, pine nuts and chives just before serving.

How to Toast Nuts
Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.
