Serve up your next meatloaf Caribbean-style, with red pepper slices, creamy dressing and a topping of melty VELVEETA.

Original recipe yields 6 servings
1 egg, beaten
1-1/2 lb. lean ground beef
1 small onion, finely chopped
1/4 cup KRAFT Lite Thousand Island Dressing
1/4 cup crushed saltine crackers
2 Tbsp. OSCAR MAYER Real Bacon Bits
1 red pepper, cut into thin strips
1/4 lb. (4 oz.) VELVEETA®, cut into 1/2-inch cubes

Heat oven to 400°F.

Mix first 6 ingredients.

Press half the meat mixture onto bottom of 9x5-inch loaf pan. Top with peppers and VELVEETA, spreading to within 1/2 inch of edges. Cover with remaining meat mixture.

Bake 45 to 50 min. or until done (160°F). Let stand 5 min. before slicing.

If you reheat the meatloaf, make sure that it is heated through, with an internal temperature of at least 165°F when tested in center with an instant-read thermometer.
