This creamy sweet potato salad surprises and delights with sweet pineapple chunks, crunchy apples and other unexpected ingredients.

Original recipe yields 12 servings
2-1/2 lb. sweet potato es (about 5)
3/4 cup KRAFT Real Mayo Mayonnaise
1/4 cup lime juice
2 tsp. dried Italian seasoning
1 tsp. crushed red pepper
1/4 tsp. ground black pepper
1 can (11 oz.) whole kernel corn, drained
1 can (8 oz.) pineapple chunks in juice, drained
1 red bell pepper, chopped
1 carrot, cut into matchlike sticks
1 red onion, chopped
1 Granny Smith apple, chopped
1 can (4 oz.) sliced black olives, drained

Cook potatoes in boiling water 30 min. or until tender; drain. Cool.
Meanwhile, mix mayo, lime juice and seasonings in large bowl. Add remaining ingredients; mix lightly.
Peel and cube potatoes. Add to vegetable mixture; toss to coat. Refrigerate 1 hour.
For a spicier salad, double the crushed red pepper.
