Rice pudding is one of the easiest, most scrumptious desserts you could make, and this one—with cinnamon, coconut milk and bananas—is no exception.
What You Need
Original recipe yields 8 servings
2 cans (15 oz. each) lite coconut milk
3/4 cup sugar
1 cinnamon stick
3/4 cup long-grain white rice, uncooked
3/4 cup thawed COOL WHIP Whipped Topping
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted

Let's Make It
Bring coconut milk, sugar and cinnamon stick just to simmer in medium saucepan. Stir in rice; cover.
Cook on low heat 20 to 25 min. or until rice is tender and pudding is thickened, stirring occasionally. Spoon into bowl; cool. Refrigerate several hours or until chilled.
Cut banana diagonally into 1/4-inch-thick slices just before serving pudding; place over individual servings of pudding. Top with COOL WHIP and coconut.
Sweets can add enjoyment to a balanced diet, but remember to keep tabs on portions. One serving of this creamy pudding is 1/2 cup.
How to Thaw COOL WHIP Whipped Topping
The best way to thaw frozen COOL WHIP Whipped Topping is in its container in the refrigerator. Depending on the size tub you have, the thawing time varies. Recommended thawing times are: 8-oz. tub - 4 hours; 12-oz. tub - 5 hours; 16-oz. tub - 6 hours. We DO NOT recommend thawing COOL WHIP Whipped Topping in the microwave.
How to Toast Coconut
Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
