Original recipe yields 12 servings
1/4 cup KRAFT Zesty Italian Dressing
2 cups long-grain white rice, uncooked
1 large carrot, shredded
1 cup frozen peas
1 small onion, chopped
2 cloves garlic, minced
4 cups fat-free reduced-sodium chicken broth

Let's Make It
Heat dressing in large skillet on medium heat. Add rice; cook and stir 2 to 3 min. or until rice is lightly browned. Add next 4 ingredients; cook 5 min. or until onion is tender, stirring frequently.
Stir in broth and salsa. Bring to boil; cover.
Simmer on medium-low heat 30 min. or until rice is tender, stirring occasionally.
Stir in 1 chopped red or green pepper or 1 cup frozen corn with the vegetables.
