Black beans and smoked ham simmered in a zesty Italian dressing add loads of flavor to this simple chicken and rice dish.
What You Need
Original recipe yields 8 servings
1/4 cup KRAFT Zesty Italian Dressing
1 broiler-fryer chicken (4 lb.), cut up
1 onion, chopped
1 green bell pepper, chopped
1 pkg. (6 oz.) OSCAR MAYER Deli Fresh Smoked Ham, chopped
2 cans (15 oz. each) black beans, rinsed
1 can (14 oz.) stewed tomatoes, undrained
1 can (15.25 oz.) corn, drained
1 jalapeño pepper, seeded, chopped
1 tsp. ground cumin
4 cups hot cooked whole grain brown rice

Let's Make It
Heat dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 5 min. on each side or until chicken is evenly browned on all sides. Remove chicken from skillet; set aside.
Add onions, bell peppers and ham to skillet; cook on medium heat 5 min. or until vegetables are crisp-tender. Add beans, tomatoes, corn, jalapeño peppers and cumin; mix well. Top with chicken.
Bring to boil; cover. Simmer on low heat 20 to 25 min. or until chicken is done (165°F). Serve over rice.
Prepare as directed, substituting 8 small boneless skinless chicken breasts (2 lb.) for the whole chicken, and reducing the final simmer time to 10 to 15 min. or until chicken is done.
