What You Need
Original recipe yields 4 servings
1 lb. sweet potatoes (about 2), peeled, quartered
1/4 cup water
1 green pepper, cut into quarters
1/2 red onion, cut lengthwise into quarters (leaving ends intact)
1 Tbsp. oil
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 tsp. brown sugar
1 tsp. smoked paprika
juice from 1 lime

Heat grill to medium heat.
Place potatoes in microwaveable bowl. Add water; cover with waxed paper. Microwave on HIGH 5 min.; drain.
Brush both sides of potato, pepper and onion pieces with oil. Grill 12 to 15 min. or until vegetables are tender, turning occasionally. Meanwhile, mix remaining ingredients until blended.
Remove vegetables from grill; cool.
Chop vegetables coarsely; place in large bowl. Add sour cream mixture; mix lightly.
Smoked paprika is made from peppers that are dried slowly over an oak burning fire for several weeks. The result is a sweet, cool, smoky flavor. Look for it in the spice section of your supermarket.
