This weeknight-quick 30-minute skillet dish is an extravaganza of everything good—from sliced peppers and zucchini to flavorful ground beef and brown rice.
What You Need
Original recipe yields 4 servings
1/2 lb. extra-lean ground beef
1 onion, chopped
1/4 cup KRAFT Lite House Italian Dressing
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1 pkg. (10 oz.) frozen corn, thawed
1 zucchini, thinly sliced
1 green pepper, cut into thin strips
3/4 cup water
1-1/4 cups instant brown rice, uncooked
1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese

Brown meat with onions in dressing in large nonstick skillet on medium-high heat. Add tomatoes and their liquid, corn, zucchini and peppers; stir. Cover; simmer on medium-low heat 5 min. Stir in water.
Bring to boil on medium-high heat. Stir in rice; cover. Reduce heat to medium-low; simmer 5 min. Remove from heat; stir. Cover; let stand 5 min. Fluff with fork.
Sprinkle with cheese; cover. Let stand 5 min. or until cheese is melted.
Sprinkle with 2 Tbsp. chopped fresh parsley just before serving.
Store any leftovers in refrigerator up to 3 days. Serve wrapped in 6-inch flour tortillas topped with TACO BELL® Thick & Chunky Salsa and BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream.
