What You Need
Original recipe yields 8 servings
2 Tbsp. canola oil
1 onion, finely chopped
1/2 cup chopped carrots
2 cloves garlic, minced
1 qt. (4 cups) water
1 carton (33.5 oz.) tomato sauce
2 cans (6 oz. each) tomato paste
1 can (12 oz.) evaporated milk
1/2 cup KRAFT Grated Parmesan Cheese

Let's Make It
Heat oil in large saucepan on medium-high heat. Add onions and carrots; cook 5 min. or until carrots are tender, stirring frequently. Add garlic; cook and stir 1 min.
Stir in water, tomato sauce and tomato paste; simmer on medium-low heat 15 min. or until slightly thickened.
Blend soup in small batches in blender until smooth. Return to saucepan. Stir in milk; cook until heated through. Serve topped with cheese.
Serve with a Parmesan grilled cheese sandwich. Just prepare your favorite grilled cheese sandwich as directed, lightly sprinkling outsides of buttered sandwiches with additional Parmesan cheese before cooking.
If you have an immersion blender, use it instead of the blender.
