Fish lovers, prepare to meet your new favorite entrée. We breaded fillets with Parmesan and Italian-style bread crumbs and pan-fried 'em 'til golden-brown.
What You Need
Original recipe yields 4 servings
1/4 cup oil, divided
1 small onion, chopped
1 can (14.5 oz.) diced tomatoes with basil, garlic and oregano, undrained
1 can (8 oz.) tomato sauce
2 Tbsp. HEINZ Balsamic Vinegar
1/4 cup KRAFT Grated Parmesan Cheese
1/4 cup dry Italian-style bread crumbs
4 tilapia fillets (1 lb.)

Let's Make It
Heat 2 Tbsp. oil in medium saucepan on medium heat. Add onions; cook 3 to 5 min. or until tender, stirring frequently. Add tomatoes, tomato sauce and vinegar; stir. Bring to boil; simmer on low heat 10 min., stirring occasionally.
Meanwhile, combine cheese and bread crumbs in pie plate. Beat egg in separate pie plate. Dip fish in egg, then in cheese mixture, turning to evenly coat both sides of each fillet. Heat remaining oil in large skillet on medium heat. Add fish; cook 3 min. on each side or until fish is golden brown on both sides and flakes easily with fork.
Serve fish topped with tomato mixture.
Substitute 35 finely crushed round butter crackers (about 1-1/4 cups) for the bread crumbs.
