Cook peppers in large skillet sprayed with cooking spray on medium-high heat 4 to 5 min. or until crisp-tender, stirring frequently.
Top half of each tortilla with cheese, peppers and onions; fold in half to enclose filling.
Spray skillet with additional cooking spray. Use to cook quesadillas, in batches, 2 to 3 min. on each side or until crisp and lightly browned on both sides. Cut into wedges to serve.
Add 1 Tbsp. chopped fresh cilantro to filling before cooking quesadillas as directed.
Serve with guacamole or corn-pepper relish.
