Queso Chicken with Tomatillo Salsa

No one will ever accuse these chicken breasts of being boring! They're covered in melted queso and served with a zesty tomatillo salsa.

Original recipe yields 4 servings
3 cups water
4 tomatillos (1/2 lb.)
2 Tbsp. chopped onions
1 clove garlic
2 tsp. chopped chipotle pepper in adobo sauce
1 Tbsp. oil
4 small boneless skinless chicken breasts (1 lb.)
2 KRAFT Big Slice Colby Jack Cheese Slices, cut in half

Bring water to boil in large saucepan. Add tomatillos; cook 5 min. or until tender. Drain, reserving 1/4 cup cooking water. Blend tomatillos, 2 Tbsp. reserved water, onions, garlic and chipotle peppers in blender until smooth. Add additional reserved water to thin, if needed.

Heat oil in large skillet on medium heat. Add chicken; cook 6 to 7 min. on each side until done (165º F). Top chicken with cheese; cover. Simmer on low heat 1 to 2 min. or until cheese begins to melt.

Place chicken on platter. Spoon sauce over chicken.

Special Extra
Sprinkle with 1 Tbsp. chopped fresh cilantro and/or top with a squeeze of fresh lemon juice just before serving.
