The recipe is simplicity itself, but these flavorful Cheese & Cherry Tomato Bruschetta Appetizers look great on a buffet table.
What You Need
Original recipe yields 8 servings
1/4 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1-1/2 tsp. CLASSICO Traditional Basil Pesto Sauce and Spread
2 slices white bread, toasted, quartered
8 cherry tomatoes, cut into 3 slices each
2 tsp. HEINZ Balsamic Vinegar
4 fresh basil leaves, cut into thin strips

Let's Make It
Heat oven to 450ºF.
Mix cottage cheese and pesto until blended; spread onto toast pieces.
Place on baking sheet; top with tomatoes.
Bake 8 min. or until heated through.
Drizzle with vinegar; top with basil.
To serve as snacks, do not quarter the toast slices before topping and baking as directed. Makes 2 servings.
How to Slice Large-Leafed Fresh Herbs
Slice large-leafed herbs such as basil and mint, into thin strips by stacking several leaves on top of one another. Roll the stack lengthwise into a cylinder. Using a sharp knife, cut the cylinder crosswise to form fine shreds. This cut is called chiffonade. Be sure to use a sharp knife - a dull knife will bruise the leaves while cutting.
