Heat oil in large skillet on medium heat. Add chicken; cover. Cook on medium-high heat 6 to 7 min. on each side on or until done (165°F). Remove from skillet; cover to keep warm.
Add water, Macaroni and peppers to same skillet; stir. Bring to boil; cover. Simmer on medium-low heat 8 to 9 min. or until macaroni is tender.
Stir in Cheese Sauce and peas; top with chicken and mozzarella. Cover; cook 2 to 3 min. or until mozzarella is melted.
Substitute frozen corn for the peas.
