In a bowl, prepare chocolate pudding mix as directed, using 2 cups of milk. Stir in half of the Cool Whip and mix well with a spoon. Set aside.
In a large microwave-safe bowl, microwave cream cheese on high for 15 seconds, stir. Microwave for another 15 seconds, stir.
Beat cream cheese with mixer on medium speed for 15 seconds. Add vanilla and half of cheesecake pudding mix to cream cheese, beat until smooth. Add remaining pudding mix and 1/2 cup milk, beat until smooth.
Spread cheesecake mix into pie shell. Spread chocolate pudding mixture on top. Chill for at least 2 hours. Top pie with COOL WHIP and grated chocolate.
