Prepare a 9x9 inch baking pan with cooking spray and set aside.
In a large saucepan, melt butter over low heat. Stir in marshmallows until smooth and remove from heat.
Carefully fold in cereal until evenly coated. Press evenly into prepared baking pan using a buttered spatula.
Allow to cool completely before cutting into one-inch bites.
Melt white chocolate according to package directions and drizzle over the top of each bite. Allow chocolate to set before packaging or storing in an airtight container.
