Folks are always impressed when there's a stuffed chicken on the table. Take your applause, and don't tell them how easy this one is to make!

2 Tbsp. butter or margarine
2 yellow squash, shredded (about 2 cups)
1 onion, chopped
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup KRAFT Shredded Sharp Cheddar Cheese
2 broiler-fryer chicken s (5 lb.), quartered
3/4 cup KRAFT Sweet & Spicy Barbecue Sauce

Heat oven to 400ºF.

Melt butter in medium saucepan on medium heat. Add squash and onions; cook and stir 2 min. or until tender. Remove from heat. Stir in stuffing mix and cheese.

Insert fingers carefully between the meat and skin of each chicken quarter to make pocket; fill with stuffing mixture. Place, skin sides up, in large roasting pan.

Bake 50 to 55 min. or until chicken is done (165ºF), brushing with barbecue sauce for the last 10 min.
