Original recipe yields 15 servings
1 egg
1-2/3 cups mashed fully ripe banana s (about 4)
1/2 cup MIRACLE WHIP Dressing
1-1/2 tsp. vanilla
1 cup sugar
1 tsp. baking soda
1-1/2 cups flour
1/2 cup coarsely chopped PLANTERS Walnuts
1/2 cup dried apricots, chopped

Heat oven to 350ºF.

Mix egg, bananas, MIRACLE WHIP and vanilla in large bowl until blended. Combine remaining ingredients in separate bowl. Add to banana mixture; stir just until moistened. (Batter will be lumpy.)

Pour into 9x5-inch loaf pan sprayed with cooking spray.

Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 min. Remove to wire rack; cool completely.
