Heat oven to 350°F.
Heat oil in large nonstick skillet on medium-high heat. Add chicken, onions and cumin; cook and stir 6 min. or until chicken is done. Stir in 3/4 cup cheese and 1/2 cup salsa.
Spread 1 cup salsa onto bottom of 13x9-inch baking dish sprayed with cooking spray. Spoon 1/4 cup chicken mixture down center of each tortilla; roll up. Place tortillas, seam-sides down, in prepared dish. Top with remaining salsa and cheese.
Bake 20 min. or until heated through.
Add 1/4 cup chopped black olives, 1/2 cup chopped green peppers or 1/2 cup frozen corn to the chicken mixture before spooning onto tortillas.
Sprinkle with 1/4 cup chopped fresh cilantro before baking.
