Mix the first 3 ingredients together well for the glaze and set to the side.
Preheat oven to 325°F.
Mix together apples, vanilla and cinnamon in a small bowl.
Sift the flour, baking soda and salt together in a separate bowl.
Beat the pudding mix, sugar, oil and eggs together in another bowl.
Add the dry ingredients into the egg mixture a little at a time and slowly.
Fold the apples into the batter.
Grease a loaf pan and add the batter.
Bake for about 1 hour and 30 minutes or until a toothpick inserted comes out clean.
Allow the cake to cool completely then remove from pan.
Drizzle the glaze over the top.
