Cheesy, saucy and layered with fresh mushrooms and spinach, this is the lasagna that's going to make you famous for your lasagna!
What You Need
Original recipe yields 8 servings
9 lasagna noodles, uncooked
1/3 cup butter, divided
1 onion, chopped
2 cloves garlic, finely chopped
3 cups sliced fresh cremini mushroom
1 cup shiitake mushrooms, sliced
8 cups loosely packed baby spinach leaves
1/4 cup flour
3 cups milk
1/4 cup KRAFT Shredded Parmesan Cheese
1-3/4 cups KRAFT Shredded Mozzarella Cheese

Heat oven to 375ºF.
Cook noodles as directed on package, omitting salt.
Meanwhile, melt 2 Tbsp. butter in large skillet on medium-high heat. Add onions and garlic; cook and stir 1 min. Add mushrooms; cook 5 min., stirring frequently. Add spinach; cook and stir 2 to 3 min. or just until wilted. Remove from heat.
Melt remaining butter in medium saucepan on medium heat. Stir in flour. Gradually add milk, stirring constantly; cook and stir 3 to 5 min. or until thickened. Remove from heat. Stir in Parmesan.
Spread 1/2 cup sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with 3 noodles, half the spinach mixture and 1 cup sauce; repeat layers. Top with mozzarella; cover.
Bake 40 min. or until hot and bubbly, uncovering for the last 10 min. Let stand about 10 min. before cutting to serve.
Serve this main dish with a mixed green salad for a quick-and-tasty weekday meal.
Preparing Perfect Pasta
Follow the package directions to ensure that enough water is used for cooking the pasta. Add the pasta to the boiling water and cook until al dente (tender but still a little firm to the bite), stirring frequently. To prevent pasta from sticking, add it slowly to plenty of boiling water and stir frequently while cooking. Adding oil to the cooking water is not recommended because some sauces may not cling to pasta coated with oil.
Shiitake mushrooms, with their woodsy flavor and meaty texture, are great either hot off the grill or cut up and used in stir-fries and pasta sauces.
