Savory, smoked ham and a citrusy lemon twist add great flavor for this easy-to-make soup that starts with chicken breasts.
What You Need
Original recipe yields 8 servings
1 lb. boneless skinless chicken breasts
2 cups water
1 bay leaf
1 clove garlic, chopped
3 cups chicken broth
1/2 cup wild rice
zest and juice of 1 lemon
1 cup chopped OSCAR MAYER Deli Fresh Smoked Ham
20 dino kale leaves, rinsed, ribs removed and torn
1 lemon thinly sliced in rounds

Let's Make It
In a large pot, combine water and chicken over medium heat. Cook for 15 minutes or until chicken is tender. Remove from heat. Remove chicken from broth and let cool. Reserve broth.
Strain chicken broth into a 5-quart stock pot. Heat over medium heat. Add bay leaf, salt, garlic, 3 cups chicken broth, rice, lemon zest and lemon juice. Cook for 10 minutes.
Shred chicken breast and add to soup. Add ham. Cook for 5 minutes more. Remove soup from heat, stir in kale, lemon slices and serve.
