Here's one of our favorite Healthy Living pasta recipes, made with linguine and a fresh cherry tomato sauce.
What You Need
Original recipe yields 4 servings
2 cups cherry tomatoes, halved
1 shallot, minced
1 Tbsp. olive oil
2 Tbsp. plus 2 tsp. POLLY-O Grated Parmesan Cheese, divided
1 pkg. (9 oz.) refrigerated linguine, uncooked
2 Tbsp. KRAFT Balsamic Vinaigrette Dressing
1 Tbsp. chopped fresh parsley
1/4 tsp. crushed red pepper

Let's Make It
Heat oven to 400ºF.
Toss tomatoes with shallots, oil and 2 tsp. cheese in 13x9-inch pan; spread to evenly cover bottom of pan.
Bake 15 to 20 min. or until tomatoes start to burst. Meanwhile, cook pasta as directed on package, omitting oil.
Drain pasta, reserving 1/4 cup cooking water. Add pasta and reserved water to tomato mixture along with the dressing, parsley and crushed pepper; mix lightly. Top with remaining cheese.
Prepare using grape tomatoes.
