What You Need
Original recipe yields 24 servings
1 boneless pork loin (3 lb.)
1/2 tsp. ground cumin
3/4 cup KRAFT Hickory Smoke Barbecue Sauce
Juice from 1 orange (about 1/2 cup)
24 oz. tortilla chips
3 cups KRAFT Finely Shredded Colby & Monterey Jack Cheeses
3 cups chopped ripe tomatoes (about 4 medium)
1 cup sliced black olives

Cut meat into large chunks; place in slow cooker. Sprinkle with cumin. Pour barbecue sauce, then orange juice over meat; cover with lid.
Cook on LOW 6 to 8 hours (or on HIGH 4 to 5 hours). Remove meat from slow cooker; cool. Meanwhile, remove cooking liquid from slow cooker; refrigerate 30 min.
Skim and discard fat from surface of cooking liquid. Chop meat or pull into shreds with 2 forks; place in large bowl. Add enough of the reserved cooking liquid to moisten meat.
Spread 8 oz. chips onto each of 3 large microwaveable platters. Top each with layers of 2/3 cup pork mixture, and 1/2 cup each cheese and tomatoes; repeat layers. Top with olives.
Microwave, 1 platter at a time, on HIGH 1 to 1-1/2 min. or until cheese is melted.
Add 2 garlic cloves, 1 sliced onion and 1 bay leaf to ingredients in slow cooker before topping with the barbecue sauce and orange juice. Remove and discard bay leaf after skimming fat from cooking liquid before using to moisten cooked meat as directed.
Meat mixture can be prepared ahead of time. Moisten chopped or shredded cooked meat with the sauce, then cool completely. Divide into 3 batches (about 2 cups each); spoon into freezer containers or freezer-weight resealable plastic bags. Freeze up to 2 months. When ready to prepare, thaw meat as needed in refrigerator overnight, heat mixture then use as directed.
For easy cleanup, line slow cooker with plastic liner bag before filling with ingredients and cooking as directed.
