Cut apple crosswise into 6 slices. Use melon baller to remove core from each slice.

Use 2-1/2- to 3-inch cookie cutter to cut cheese into 5 rounds. Discard trimmings or reserve for another use.

Stack apple slices, inserting cheese rounds between slices.
