This smooth and silky dulce de leche mousse is an impressive dessert. But to really knock their socks off? Serve it in almond lace cups!
What You Need

Original recipe yields 8 servings
3 Tbsp. butter
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/4 cup flour
2 Tbsp. orange juice
1/2 cup PLANTERS Sliced Almonds, finely chopped
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1-1/2 cups cold milk
1/2 cup dulce de leche (sweetened milk caramel)
1 cup thawed COOL WHIP Whipped Topping

Heat oven to 350ºF.

Microwave butter in medium microwaveable bowl on HIGH 5 sec. or just until softened. Add sugars, flour and orange juice; mix well. Stir in nuts. Refrigerate 15 min.

Meanwhile, beat pudding mix, milk and dulce de leche in separate medium bowl with whisk 2 min. Stir in COOL WHIP. Refrigerate until ready to use.

Drop tablespoonfuls of nut mixture, 4 inches apart, into 8 mounds on foil-covered baking sheets.

Bake 8 to 10 min. or until crisp and lightly browned. Cool on baking sheet 1 min. Meanwhile, use scissors to cut foil around cookies, making cut about 1 inch from edge of each cookie. Transfer 1 cookie (with foil) to wire rack; carefully bend edge to resemble cup. Repeat with remaining cookies. Cool until firm.

Peel foil carefully off cookie cups. Fill each cup with 1/3 cup pudding mixture just before serving.

How to Avoid Breaking the Lace Cookies
Lace cookies have to be managed gently after baking otherwise they will break into pieces. After removing the baked cookies from the oven, cool them on the baking sheet for about 1 min. to firm up slightly before shaping into cups as directed. For best results, place the shaped cookie cups on the serving plate before filling as directed. These cookies also make great garnishes for other desserts.
Make Ahead
The nut mixture can be prepared in advance. Store in tightly covered container in refrigerator up to 2 weeks before using as directed. Or, freeze in airtight container up to 2 months; thaw in refrigerator before using as directed.
