Grilled cheese is welcome in any form, and our chicken salad panini, with its fresh veggies and hot habanero cheese slices, is certainly no exception.
What You Need
Original recipe yields 4 servings
1 fully ripe avocado, mashed
2 Tbsp. fresh lime juice
2 cups chopped cooked chicken
1/4 cup chopped red onion s
1/4 cup MIRACLE WHIP Dressing
2 Tbsp. chopped fresh cilantro
8 Italian bread slices
1 plum tomato, cut into 8 slices
4 KRAFT Big Slice Hot Habanero Cheese Slice s
1 cup loosely packed fresh spinach

Let's Make It
Heat panini grill.
Mix avocado and lime juice until blended. Combine chicken, onions, dressing and cilantro; spoon onto 4 bread slices. Top with tomatoes, avocado mixture, cheese and spinach; cover with remaining bread slices.
Grill, in batches if necessary, 4 to 6 min. or until sandwiches are golden brown and cheese is melted.
Prepare using MIRACLE WHIP Light Dressing.
How to Ripen Avocados
Ripen avocados at room temperature. They will ripen faster if they are placed inside a brown paper bag along with a banana or an apple. Close the bag and leave at room temperature until the avocados are ripe.
If You Don't Have a Panini Grill
Heat skillet on medium heat. Cook sandwich 3 min. on each side or until cheese is melted and sandwich is golden brown on both sides, gently pressing down top of sandwich with spatula to flatten slightly as it cooks.
