What You Need
Original recipe yields 6 servings
2 cups chopped fresh mangos
1/2 cup ATHENOS Traditional Crumbled Feta Cheese
4 green onions, chopped
3 Tbsp. chopped fresh basil
1 fresh jalapeño pepper, chopped
2 Tbsp. olive oil
1-1/2 cups water
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 boneless pork chops (1-1/2 lb.), 1/2 inch thick

Let's Make It
Heat oven to 400°F.
Combine first 6 ingredients.
Add water to stuffing mix in medium bowl; stir just until moistened. Spread onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with chops, then mango mixture.
Bake 30 to 35 min. or until chops are done (145°F). Remove from oven. Let stand 3 min. before serving.
This simple recipe is equally delicious when prepared with frozen mangos.
