What You Need
Original recipe yields 4 servings
1/2 cup KRAFT Tuscan House Italian Dressing, divided
4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
2 cups grape tomato es, chopped
1/2 cup ATHENOS Crumbled Reduced Fat Feta Cheese
2 Tbsp. finely chopped fresh mint
4 cups tightly packed baby spinach leaves

Pour 1/4 cup dressing over chicken in shallow dish; turn chicken to evenly coat both sides of each breast. Refrigerate 10 min. Meanwhile, combine tomatoes, cheese, mint and remaining dressing.
Remove chicken from dressing; discard dressing. Cook chicken in large nonstick skillet on medium heat 6 to 7 min. on each side or until done (165ºF).
Cover platter with spinach; top with chicken and tomato mixture.
Prepare using chopped stemmed kale or your favorite mixed greens.
