What You Need
Original recipe yields 6 servings
2 cups chopped fresh peaches
1/2 cup ATHENOS Traditional Crumbled Feta Cheese
1/2 cup chopped red onions
3 Tbsp. chopped fresh basil
1 fresh jalapeño pepper, chopped
2 Tbsp. olive oil
1-1/2 cups water
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
6 small boneless skinless chicken breasts (1-1/2 lb.)

Let's Make It
Heat oven to 400°F.
Combine first 6 ingredients.
Add water to stuffing mix in medium bowl; stir just until moistened. Spread onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with chicken, then peach mixture.
Bake 30 to 35 min. or until chicken is done (165°F).
If the chicken breasts in your market are larger than 4 oz. each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (165°F).
