Original recipe yields 8 servings
1 Tbsp. oil
2 lb. boneless beef chuck roast, cut into 1-inch chunks
1 cup BULL'S-EYE Original Barbecue Sauce
1 Tbsp. finely chopped canned chipotle peppers in adobo sauce with 2 Tbsp. sauce
5 carrot s, cut into 1-inch lengths
6 small red potato es (1-1/2 lb.), quartered
2 cups sliced fresh mushrooms
1 large onion, coarsely chopped

Heat oil in large skillet on medium heat. Add meat; cook 5 to 6 min. or until evenly browned, stirring occasionally. Spoon into slow cooker.
Mix barbecue sauce, chipotle peppers and adobo sauce; pour half over meat in slow cooker. Top with vegetables. Cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 4 to 5 hours).
Stir in remaining barbecue sauce mixture.
Serve topped with BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.
