OK, technically this is not ceviche since we cooked the shrimp. But the beautiful presentation and citrusy flavor is ceviche-like.

Original recipe yields 8 servings
1/2 cup each fresh lime and orange juice
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup chopped fresh cilantro
1 lb. cooked cleaned medium shrimp
1/2 cup thin matchlike jicama sticks
1/4 cup slivered red onion s
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese

Whisk lime juice, orange juice, dressing and cilantro until blended. Add to shrimp in large bowl; toss to evenly coat shrimp.

Add remaining ingredients; mix lightly.

Refrigerate 30 min.

Substitute
Substitute lemon juice for the lime juice.

Variation
Substitute your favorite fresh seafood, such as scallops, clams, crab and/or chunks of white fish, for some or all of the shrimp.

Ceviche makes a great appetizer to bring to a summer party or barbecue. If desired, double or triple the ingredient amounts and serve over saltine crackers or tortilla chips.
