What You Need
Original recipe yields 4 servings
1 cup long-grain white rice, uncooked
2 cups fat-free reduced-sodium chicken broth
1/2 cup MIRACLE WHIP Light Dressing
1 Tbsp. chili powder
4 small boneless skinless chicken breasts (1 lb.)
1 tomato, chopped
1/3 cup sliced black olives
1/2 cup KRAFT Shredded Cheddar Cheese

Let's Make It
Combine first 4 ingredients in large skillet sprayed with cooking spray; top with chicken. Bring to boil; cover. Simmer on medium-low heat 25 min. or until chicken is done (165°F).
Top chicken with tomatoes and olives; cover. Cook 5 min. Remove from heat.
Sprinkle with cheese. Let stand 5 min. or until cheese is melted and all liquid is absorbed.
Serve with a bagged green salad tossed with your favorite KRAFT Dressing, such as Italian or Ranch.
