Sometimes a straight-up baked salmon is all you want. But when you want more color and complex flavor, serve it up with this olive and mango salsa!
What You Need
Original recipe yields 8 servings
8 salmon fillets (4 oz. each)
1 yellow pepper, chopped
1/2 cup sliced pimento-stuffed green olives
1/2 cup chopped fresh mango s
4 green onions, chopped
1 Tbsp. KRAFT Parmesan Cheese
1 cup KRAFT Mango Chipotle Vinaigrette Dressing

Let's Make It
Heat oven to 400°F.
Place salmon, skin sides down, in rimmed baking pan sprayed with cooking spray.
Combine remaining ingredients. Spoon evenly over salmon.
Bake 18 to 20 min. or until salmon flakes easily with fork.
Serve with lemon wedges.
Sprinkle with chopped fresh cilantro just before serving.
