Original recipe yields 10 servings
1 boneless pork loin (2-1/2 lb.)
1-1/2 lb. baking potato es (about 5)
2 carrot s, peeled, cut into 1-inch pieces
2 parsnips, peeled, cut into 1-inch pieces
1/4 cup KRAFT Zesty Italian Dressing
1/3 cup KRAFT Original Barbecue Sauce

Heat oven to 350ºF.

Place meat in roasting pan sprayed with cooking spray. Toss vegetables with dressing; place in pan around meat.

Bake 1-1/2 hours or until meat is done (145ºF), turning vegetables and brushing meat with barbecue sauce after 45 min.

Remove meat and vegetables from oven. Cover meat loosely with foil; let stand 10 min. before slicing. Serve with vegetables.

Substitute
Substitute 1/2 peeled small turnip or 2 celery stalks, cut into pieces, for the parsnips.

Testing for Doneness in Pork
To be sure pork is fully cooked, check the internal temperature with an instant-read meat thermometer. Insert the thermometer 2 to 2-1/2 inches into the thickest part of the meat, not touching any bones - it should read 145°F. If checking thinner pieces, such as pork chops, insert the thermometer through the side of the meat. After pork registers 145ºF, remove from heat and let it stand 3 min. before serving.

Store Potatoes in Darkness
Store potatoes away from direct sunlight. Prolonged exposure to light can cause potatoes to develop a green tinge, which tastes bitter and can be toxic if eaten in large quantities. Trim off any green areas before using potatoes.
