Microwave caramels and water in small microwaveable bowl on HIGH 1 to 1-1/2 min. or until caramels are completely melted, stirring every 30 sec. Drizzle over bread pudding.
Mix pudding ingredients and pour into prepared baking dish as directed; sprinkle with chocolate. Refrigerate up to 24 hours. When ready to serve, bake as directed, increasing the baking time if necessary until pudding is done. Prepare caramel sauce, then drizzle over pudding as directed.
