Original recipe yields 8 servings
1 lb. Italian sausage
2 Tbsp. KRAFT Zesty Italian Dressing
4 zucchini, cut lengthwise in half, sliced
1 red pepper, finely chopped
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1/2 lb. (8 oz.) VELVEETA, cut into 1/2 inch cubes
2 cups instant white rice, uncooked
2 cups water

Heat oven to 350°F.
Brown sausage in large deep skillet; drain. Return to skillet.
Add dressing, zucchini, peppers and tomatoes with liquid; cook 5 to 6 min. or until vegetables are tender, stirring occasionally. Add VELVEETA, rice and water; stir. Spoon into 13x9-inch baking dish sprayed with cooking spray.
Bake 35 to 40 min. or until rice is tender and casserole is heated through.
Stir in 1 minced garlic clove and 1 tsp. dried oregano leaves with the tomatoes.
Prepare as directed, using 1 lb. lean ground beef, 2% Milk VELVEETA and instant brown rice.
