2 slices whole grain bread
2 KRAFT Singles
1/2 cup tightly packed stemmed baby bok choy, cut into thin strips
1 tsp. KRAFT Asian Toasted Sesame Dressing
6 thin red pepper strips
2 tsp. extra virgin olive oil

Cover 1 bread slice with 1 Singles and bok choy; drizzle with dressing. Top with peppers, second Singles and remaining bread slice.
Brush outside of sandwich with oil.
Cook in skillet on medium heat 2 to 3 min. on each side or until Singles are melted and sandwich is golden brown on both sides. Cut into quarters.
Pair this recipe with fresh fruit and fat-free milk for a great lunch.
Cook sandwich on hot griddle heated to 350ºF instead of in the skillet on the stove top.
