This delish spinach bake is a bit like a deep-dish quiche—if that quiche contained both Parmesan and Neufchatel cheeses, plus sour cream for richness.

Original recipe yields 8 servings
1 Tbsp. butter
1 small onion, chopped
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained
1/2 tsp. garlic powder
1/4 tsp. paprika
1/8 tsp. ground black pepper
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1 container (8 oz.) BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

2 Tbsp. KRAFT Grated Parmesan Cheese

Heat oven to 325°F.

Melt butter in medium skillet on medium heat. Add onions; cook and stir 5 min. or until crisp-tender. Remove from heat; stir in spinach and seasonings.

Beat Neufchatel, sour cream and eggs in large bowl with mixer until blended. Add spinach mixture; mix well.

Spoon into 9-inch square pan sprayed with cooking spray; cover.

Bake 30 min. Sprinkle with Parmesan; bake, uncovered, 15 min. or until heated through.
